Sprinkle the berries with a tablespoon of sugar, wait for the juice to release, and drain it. Grease a ceramic or glass mold with butter and place the cherries in it in an even layer.

Prepare the dough separately. Beat the eggs with the remaining 100 g of sugar, vanilla sugar and 100 ml of milk. Then start adding flour and mixing the dough. At the end, add the melted butter, the remaining milk and beat the dough at low mixer speed. It should turn out liquid, like for pancakes.

Fill the cherries with the dough and place them in an oven preheated to 180°C for half an hour. Cool the finished clafoutis and decorate with powdered sugar.

In its homeland, France, clafoutis is made from pitted cherries: they give the dish a subtle almond flavor. But eating such a pie is not very convenient and safe.

Therefore, if you want to get closer to the authentic recipe, add ½ teaspoon of almond extract to the dough.

Ingredients

  • 100 g butter;
  • 160–170 g sugar;
  • 2 eggs + 1 yolk for greasing;
  • 50 g fresh yeast;
  • ¼ teaspoon salt;
  • 200 ml milk;
  • 400 g flour;
  • 1 kg cherries;
  • 2 tablespoons starch.

Preparation

First cook. To do this, mix melted and cooled butter with 100 g of sugar in one bowl, and in another, grind the eggs with yeast and salt so that there are no lumps. Combine both mixtures, mix, add warm milk and mix again. At the end, add flour, knead the dough, cover it with a towel and leave to rise for about an hour.

While the dough is resting, remove the pits from the cherries. Place the berries in a colander or sieve over a bowl to drain the juices.

Divide the risen dough into two parts: one should be larger, the other smaller. Set aside the smaller part, and roll out the other so that the layer is slightly larger than the baking sheet and you get sides. Transfer the dough to a greased or parchment-lined baking sheet.

Mix the prepared cherries with the remaining sugar and starch. Transfer the filling to the baking sheet with the dough and cover it with the sides.

Roll out a small piece of dough, cut strips out of it and decorate the pie with them. Brush it with yolk and bake in the oven at 160°C for 40 minutes.

The yolk can cause the cake to brown quickly. To prevent it from burning, cover it with foil 20-25 minutes after the start of cooking.

The finished dessert should cool completely on the baking sheet. After this, it can be cut and served.

Cherry pies are good all year round. The juicy and dense berry retains its shape well even when harvested for the winter. The sweet and sour taste goes perfectly with chocolate, lemon, and cinnamon. These ingredients, added to the filling, will add a special touch of sophistication to the finished baked goods.

Cherries attract chefs due to the density of the berries. When processing it, a small amount of liquid is released. It is good to use fresh, canned or frozen. The last two types of harvested cherries actively release water, which must be drained and the berries dried on a paper towel. The fresh product is washed, the seeds are removed, and excess liquid is drained if necessary.

Ready-made cherry filling is used when working with different types of dough. For the pie, you can make unleavened, shortbread, yeast, or sponge cake. The aroma of vanilla added to the dough will highlight the taste of the berry and the finished product will delight you with a wonderful smell.

This cherry pie is so simple that even a novice housewife can easily prepare it, and it always turns out very tasty. The beauty of the recipe is that you can use not only cherries, but also any berries or fruits, and preferably fresh ones, not frozen ones.

I recently published a recipe for shortbread. It is also prepared very simply and is also very tasty, but completely different from the one we will prepare today.

Ingredients:

  • 500 g fresh cherries
  • 180 g sugar
  • 150 g butter
  • a pinch of salt
  • 4 large eggs
  • 200 g flour
  • 1 tsp. without a heap of baking powder
  • vanillin

Preparation:

First, wash the cherries and remove the pits. If there is no special device, it is convenient and easy to do this with a regular safety pin.

Softened butter and 180 g Sahara mix with a mixer at low speed. Use the finest sugar and butter that melts easily at room temperature.

Add a pinch of salt and add the eggs one at a time, mixing well after each time.

When all the eggs were added, we got this mixture:

Sift 200 g of flour into a bowl, add a level teaspoon of baking powder and vanilla on the tip of the teaspoon. If there is no vanillin, you can add a tablespoon of vanilla sugar. Then add flour in partsinto the egg-butter mixtureand mix the dough until smooth. The consistency of the cherry pie dough is thicker than that of pancakes.

Now is the time to turn on the oven and preheat it to 180 degrees.
Take a springform pan, grease the bottom and sides with vegetable or butter and sprinkle with semolina (2 tsp) so that the finished cherry pie can be easily removed from the pan. A mold with a diameter of 24 cm is ideal, but you can take 22 cm or 26 cm, just the cooking time will change - the higher the cake, the longer it takes to cook.

Pour the dough into the mold and place the cherries on top, lightly pressing them into the dough. If juice has accumulated in the bowl with cherries, drain it; there is no need for excess liquid in the pie.

Sprinkle 1-2 tbsp on top. l. sugar depending on how sour the cherries are. Place the pan in the oven and bake for 40-45 minutes. With a mold size of 22 cm, the cake can be baked for an hour, and with a mold size of 26 cm, it can take 30-35 minutes. In general, watch for yourself. We check the readiness with a wooden stick or a thin knife - if there is no batter left on them, the cherry pie is ready.

If the pie is already sufficiently browned, but the inside is still raw, reduce the temperature to 150 degrees, then it will reach the inside and will not burn.

In general, the finished cherry pie should look something like this; during baking it will approximately double in size.

Sprinkle the completely cooled pie with powdered sugar.

You will definitely like it - tender, moderately sweet, with a pleasant cherry sourness - in a word, very tasty!

This pie is somewhat reminiscent of pie, which we love very much and eagerly prepare.They also turn out great with cherries. , the dough for which can be prepared in a bread machine.
