  • Wrap the finished dough in cling film and 20-30 place in the refrigerator for minutes.
  • Roast the peanuts in the oven for 10 minutes at temperature 160 °- 170 °C.
  • Roll out the dough on a floured board until thick 6-7 mm. Shape or ring with a diameter of approximately 8 cm cut out circles.
  • Cut holes inside the circle approximately 2 cm in diameter. Place in the freezer for 15-20 minutes.
  • Grind the toasted nuts with a knife or blender in the “Pulse” mode, but not very finely.
  • Add to yolk 1 teaspoon of water and stir. Grease the top of the rings with yolk and place the greased side into the nuts. Place on a baking sheet lined with parchment, nuts side up.
  • Preheat oven to 200 °C. Bake shortbread cookies with nuts 12-15 minutes in a well-heated oven. No need to brown.

Everyone's favorite French cakes made from beaten egg whites and almond flour.

Recipe from Elizaveta Glinskaya (winner of “Master Chef 2”).

To prepare almond flour, you will need raw almonds, they must be blanched (pour boiling water over them, leave for a couple of minutes, drain the water, repeat again), peel and place on a paper towel (I left it overnight). Then place on a baking sheet and dry in the oven at 100 degrees for 1.5-2 hours.

Egg whites for making macarons should also be prepared in advance - leave them at room temperature overnight.

So let's get started:

How to make macarons:

1. Measure out 150 g of powdered sugar, mix it with 150 g of almond flour until smooth and sift. Pour 55g of egg whites on top and set aside.

2. Mix the remaining 150 g of powdered sugar with water and dye, put on medium heat and after the first bubbles, cook for 3:40-4 minutes (if you have a kitchen thermometer, then cook to 118 degrees).

3. Meanwhile, beat 55 g of egg whites and pour the syrup (hot, 118 degrees) into the whites in a thin stream, without stopping whisking - first at high speed, then turn on low and stir until cool.

4. Add the whipped whites in portions to the mixture of flour and powder and mix with a spatula.

5. Once mixed until smooth, fill a pastry bag and place the macarons on parchment paper (on a baking sheet or board) in a checkerboard pattern.

Keep in mind that they will still spread, so don't make them too big. This dough should yield approximately 35 macarons, which means 70 halves. Try to distribute no more than 20-23 halves onto one parchment.

5. After this, with the board on which the parchment with the halves lies, you need to knock on the table so that the air comes out and the cap is smoothed out. And leave the macarons for 40 minutes - 1 hour (this is important!).

6. Bake macarons on a baking sheet for 9-11 minutes at 170 degrees. At 6 minutes, open the oven slightly to release excess moisture. Remove the macarons from the baking sheet and match the halves together.

7. According to Lisa’s recipe, the macarons were filled with lemon confit, but I decided to reduce the time and filled them with custard. I still have the cream, but if I write half of it, there may not be enough. So, I’m writing as I did.

Grind the yolks with sugar and vanilla sugar, add flour, stir and pour in milk. Brew until thickened, stirring continuously with a whisk. Cool and beat again with a mixer, adding butter.

I applied the cream to the macarons in a circle using a pastry sleeve, but this is convenient for everyone.

    • We prepare the products. We take the butter out of the refrigerator in advance - we will need it in softened form. To prepare cookies for this recipe, we will need a meat grinder.
    • Place soft butter, sugar and vanilla sugar in a bowl.
    • Cream the butter and sugar with a fork or whisk.
    • Break the eggs into a bowl and whisk again.
    • Sift flour with baking powder.
    • Gradually add flour in portions and knead the dough.
    • The dough turns out elastic and does not stick to your hands.
    • Wrap the dough in cling film and place in the refrigerator for about 40 minutes.
    • You need to take the dough out of the refrigerator in parts, as it melts quickly and becomes difficult to work with. Pass a small part of the dough (about the size of your palm) through a meat grinder without a knife, with a nozzle with the largest holes.
    • We immediately separate the “snakes” from the dough into 3-4 pieces and roll them into a rope.
    • We roll the resulting strand into a spiral in a circle, and we get a product in the form of a rose. This is how we form cookies from all the dough. Preheat the oven until 190 degrees.
    • Place the cookies on a baking sheet lined with parchment paper. I ended up with two baking sheets. Bake shortbread cookies in the oven at 190 degrees 15-20 minutes.

      • Through 10 minutes, remove the dough from the refrigerator. For convenience, roll out the dough in parts.
      • Place a piece of vanilla dough between two sheets of baking paper and roll it out into a rectangular layer with a thickness of approximately 4 millimeter. During the rolling process, you can lift the sheet and trim the dough to form a regular rectangle.
      • We do the same with the chocolate dough - place it between two sheets of baking paper and roll it into a rectangular layer with a thickness of approximately 4 millimeter.
      • The layers of chocolate and vanilla dough should be the same size. Place a layer of chocolate shortcrust pastry on a layer of vanilla shortcrust pastry.
      • Take another small piece of vanilla dough, form a sausage and place it on top of the chocolate shortbread dough.
      • Roll everything together using baking paper. Cut the roll into cookies, thick 5 millimeters
      • Place them on a baking sheet lined with baking paper.

    – if there is a silicone mat with a honeycomb pattern, we roll the ball onto the mat into a circle 3-4 mm thick,

    and cut out cookies from it with a mold 6 cm in diameter. The number of such blanks must be even, you will understand why later.


    2nd method

    We form cookies using a regular grater. Roll out a circle on a grater, as in the previous case,

    cut it out with a shape and carefully remove it from the grater.
