I'm all about the fact that in one village near Milan (150 km somewhere), a decent grandfather taught me how to cook simple pasta with vegetables. He did not know a word of English, and studied me with genuine interest all the time we talked there. It's like I came from the moon. And to his friends passing by, he leaned out the window and said, “Here, they say, the guys from Russia have arrived! For what? Well, because I have the best restaurant in Milan! We came to eat and learn how to cook!” I remind you that Milan is an hour and a half away by car.

There were many dishes, I still remember the taste of each, a special place, you can see. But today I'm going to talk about pasta. I don’t know what it is called correctly, so we will consider it just a village one. Everything is cooked in the oven, it takes an hour if everything is done from scratch. He had everything, of course, faster.

The essence is simple - pasta is served with tomato sauce and baked vegetables. Everyone knows how to cook pasta, in this case spaghetti. I will add only a little secret - when draining the water, he left quite a bit, then sprinkled the pasta with very finely grated Parmesan, put it on the fire for a minute, and spaghetti was obtained that evenly absorbed the aroma of cheese.

The sauce is made for a long time - first, onions and garlic are fried, punched tomatoes in their own juice, a little tomato paste, basil, salt, pepper, white wine, water are added. The whole thing is evaporated over medium heat to half the volume. I didn’t have white wine - I added champagne - everything hissed beautifully for a few seconds. On a note! Now we reduce the heat, add finely chopped red bell peppers, celery, fresh tomatoes, add water, and transfer to a small fire (he just put the pan in the side of the stove) and evaporate to the consistency we like.

We put yellow pepper in the form (it is necessary to pierce it so that it does not burst), eggplant strips, zucchini quarters, fennel slightly boiled before, celery root, tomatoes, onions and garlic heads wrapped in foil so as not to burn. Pour everything with olive oil, put on medium heat (in a conventional oven it is 180-190 degrees) and wait 20-25 minutes. As a result, we get baked vegetables that have absorbed all the flavors. What could be better? You can bake any vegetables that you like, everything is completely individual here.

We rub the garlic into a paste and then add it to the main sauce (crazy aroma!), Cut the onion into petals, cut the tomatoes into large pieces, cut out the soft middle of the zucchini, and so on. Peeling vegetables is up to you. We cut everything into squares or cubes of approximately the same size, sprinkle with olive oil and balsamic on top.

And now we are assembling the dish: we take spaghetti, pour a ladle of sauce in the middle, put those vegetables that we love in a slide on top. As a result, we get the most fragrant pasta (at home, of course, it’s a bit different!) With different vegetables. Each time, our pasta opens up differently, in the mouth and the sweetness of celery root, and the spice of pepper, and the sourness of balsamic, and the aroma of wine, and Parmesan salt - you yourself understand. But everything is so organic!

Pasta and everything that is prepared from them, people primarily associate with Italy. Indeed, in this country, pasta with vegetables is the same familiar dish as bacon in Ukraine.

mediterranean option

Those who have no idea about Italy can start their acquaintance with the national cuisine. Pasta with vegetables is perfect for this. In some recipes, it is called "Mediterranean". To work, you need quite a bit: for 0.5 kilograms of any pasta, 2 red and green pairs of onions, one large eggplant and zucchini each, salt, 3 cloves of garlic, 2 cans of canned tomatoes, ground pepper, 150 grams of vegetable oil and dried herbs ( oregano, basil).

You need to do everything in steps:

  1. Wash the onion and pepper, peel and cut into large pieces.
  2. Fry the prepared vegetables in oil for 5 minutes, adding 1 clove of garlic, passed through a press, to the mixture.
  3. Do the same with zucchini and eggplant. It is better to work on different dishes.
  4. Collect the products in one deep frying pan, add salt, tomatoes, herbs (a couple of tablespoons), pepper. Simmer for 20 minutes over very low heat.
  5. Boil the pasta in a separate pot. Drain water and add pasta to vegetables. Products should be stewed together for 1-2 minutes.

Now the pasta with vegetables is ready, it can be safely served on the table.

Worthy alternative

If desired, pasta with vegetables can be prepared much easier. To do this, you only need 400 grams of spaghetti, 1 tomato, 70 grams of hard cheese, half an onion and a head of garlic, a teaspoon of salt, 30 milliliters of vegetable oil, parsley (a couple of sprigs) and 0.8 liters of water.

The process goes in several stages:

1) Preparation of products. To do this, you need to chop the garlic with a knife, cut the onion into half rings, cut the tomatoes into cubes, and grate the cheese with a grater.

2) Add pasta, tomatoes, onion, oil to the pan. Pour food with water and put on the stove. After boiling, cook until the water evaporates.

3) Add garlic, stir and again leave to cook for another 2 minutes.

4) Pour in the cheese, cover with a lid and turn off the heat. After a couple of minutes, the dish will be completely ready for eating.

Before laying out on plates, it must be mixed well, and then you can decorate with small pieces of fresh tomatoes.

If we turn to the dictionary, we can see that the word "paste" has another meaning. This is a porridge-like homogeneous mass. In cooking, there is also the concept of "tomato paste". It, in fact, is a product obtained by boiling juicy tomatoes. But if you add a few more products from the garden to the usual mixture, you will get excellent vegetables. To prepare the dish, you will need: 10 tomatoes, 2 onions, 6 cloves of garlic, 2 peppers, a tablespoon of sugar, 70 grams of vegetable oil, 30 grams of vinegar, a little salt and 2 glasses of water.

Work is carried out in the usual sequence:

  1. Rinse all the vegetables thoroughly, and clean the inside of the pepper from the seeds.
  2. Then cut everything with a knife into medium-sized cubes.
  3. Pour the oil into a deep frying pan with a thick bottom, put on fire and bring to a boil. Put onion and garlic there and fry for 3 minutes until a characteristic smell appears.
  4. Add tomatoes and peppers. Continue to simmer the mixture for another 10-15 minutes, until the products soften.
  5. Pour ½ cup of water into the pan and continue to heat the contents for 5 minutes.
  6. Add the remaining ingredients according to the recipe and continue the cooking process for another 5 minutes.
  7. As soon as all the ingredients turn into porridge, close the lid tightly and leave the pan to cool the product.

If desired, the mixture can be ground in a blender. If not, then even usual form it will be a great addition to boiled rice, pasta or meat dishes.

Pasta in sauce

In Italian cuisine, dishes are often found when pasta is immediately cooked in sauce.
