To prepare the noodles themselves, you need only four ingredients: flour premium, egg yolks, olive oil and salt. The dough is kneaded from all the ingredients, then it is covered with a film and left for an hour. A layer is formed from the finished dough, then it is cut into strips.

With egg noodles, you can cook many delicious and healthy dishes. Usually, noodles are served with fried vegetables, chicken, beef, seafood, mushrooms, etc. First, egg noodles are boiled in boiling water, then stewed for several minutes in soy sauce with the rest of the ingredients. Such a simple, but very tasty and healthy dish can be prepared every day, and some variations are perfect for a festive dinner. Mix everything properly, after 3 minutes remove from heat, cover with a lid. Heat the oil in a frying pan and add all the shrimp. Fry for 3-4 minutes, stirring occasionally. Take the pan off the heat, cover with a lid. Mix the sauce before serving. We serve the dish like this: first put the noodles on a plate, a little shrimp on top and pour everything cream sauce.

There are no special subtleties in the preparation of egg noodles. It must first be boiled in boiling salted water until cooked or half cooked (as indicated in the recipe). At the same time, vegetables or meat are fried. The noodles are laid out to the rest of the ingredients and heated for several minutes in soy sauce. For a more piquant and spicy taste, you can add garlic, ginger, cardamom, black or red ground pepper and other spices to the dish. And you can do it differently: boil the noodles separately, fry separately, or boil additional ingredients and mix it all right before serving. For such a dish, you can prepare a creamy or tomato sauce.

In Chinese, noodles with vegetables are called Shu cai chao mian
(蔬菜 - vegetables, 炒 - fry, 面 - noodles).

We immediately denote all the richness of the options for this dish. Here you can put any vegetables that are on this moment available in the refrigerator. Probably the only vegetable that doesn't fit here is potatoes.

We took:

  • egg noodles - approximately 150 g
  • 1 medium sized bell pepper (you can take halves of different colors)
  • white cabbage 150 g
  • 1 medium onion
  • 1 carrot
  • 2 or 3 eggs (optional)
  • vegetable oil for frying
  • salt (1/4 teaspoon)
  • chili sauce with beans (optional)

You can add broccoli, celery, Chinese cabbage and so on. You can skip the eggs. You can take not egg noodles, but, for example, buckwheat. There are many options for improvisation! It seems to us that the most "flavorful" vegetables here are carrots and onions, they provide a nice subtle sweetness that goes great with noodles. It is quite possible that without them it will turn out pretty well. But we haven't tried.

First, cut the vegetables: carrots and peppers into strips, onions into half rings, cabbage into thin strips. Break the eggs into a small bowl, salt and beat lightly, as for an omelette.

We put a wok or a large frying pan with thick walls on the fire and heat the vegetable oil in it properly (4-5 tablespoons). Pour beaten eggs into hot oil and wait until they turn into a kind of omelet.

If you are also cooking in a wok, you will sometimes have to mix the egg mass with a spatula so that it all “grabs”. Just do not let it burn, the omelet should not darken, otherwise it will look unappetizing in the finished dish! We divide the finished omelet with a spatula into small pieces (to make it convenient to take with chopsticks) and put it in a pre-prepared bowl.

A turn of onions and carrots. The frying pan with oil is again on a hot fire. If after frying the eggs there is almost no oil left in the pan, you need to add it. Heat the oil well and throw the onions and carrots into the pan at the same time. Fry over high heat, stirring constantly, until the onion is golden-transparent. Carrots should darken slightly.

Remove from heat and spread the carrots and onions (you can use the same bowl where the omelette is already waiting). And then we consistently repeat this procedure in turn with all the remaining vegetables: fry in hot oil, stirring, and put in a bowl. Cabbage is fried a little longer than other vegetables - 2-3 minutes. It should become only slightly soft, the crunchiness should remain. Bulgarian pepper, on the contrary, fry very quickly, a maximum of a minute, or even less.

Even at the stage of frying vegetables, we put water on the fire for boiling noodles. A few words about the noodle itself. Egg noodles can be bought in large supermarkets, in the grocery department. If you can't find Chinese, take Japanese, the taste is the same! And, as already mentioned, you can take buckwheat instead of egg noodles, it will also turn out delicious.

When the water boils, lightly salt it (per liter of water - somewhere a teaspoon of salt) and lower the noodles there. It is better to first look at the manufacturer's recommendations on the cooking time on the packaging. Our noodles had to be boiled for five minutes over high heat, then added to the pot for half a cup cold water and continue to cook over moderate heat until tender. So we did.

We periodically stirred the noodles with chopsticks so that they would not stick together.
We throw the finished noodles into a colander and let the water drain.

The final step is putting everything together. We put a pan with a small amount of oil (2-3 tablespoons) over medium heat. We heat it up, put our noodles there, then all the vegetables we fried, mix thoroughly and try.

Add soy sauce or salt as desired. You can add a spoonful of sesame oil (if you like its taste). Sesame oil can be bought in Auchan or Metro. Spicy lovers can put a teaspoon of chili sauce with beans.

And now let's talk about the economy version of the same dish, which is practiced with might and main in modern China. As noodles, you can take ... an ordinary doshirak! Or any other similar wavy noodles from the fast food series that cost mere pennies. We don’t need bags with sauces and additives, but we throw the noodles themselves into boiling water, cook for 2-3 minutes, put them in a colander, and let the water drain. From vegetables, you can take only carrots and onions, increasing their number compared to what we took. Everything else is done exactly the same! And it's also hearty and delicious.

Inspired by going to a Chinese restaurant, I wanted to make my own Chinese-style egg noodles with vegetables. I saw how such noodles are prepared at fast food outlets: vegetables are fried very quickly over high heat, the noodles are boiled at the same time, then all this is combined and seasoned with soy-based sauce. It seems nothing complicated. And indeed, egg noodles with vegetables, the recipe of which I offer you today, turned out to be very tasty and did not require me to special efforts and time costs. Fast, tasty, juicy and bright. It turns out no less tasty and I recommend it!

Ingredients:
- egg noodles for two servings,
- 1 carrot,
- 1 zucchini,
- 1 sweet pepper,
- a handful of cherry tomatoes
- 2 cloves of garlic,
- a few pods of beans,
- 1 cauliflower inflorescence,
- 3 tablespoons soy sauce,
- 3 tablespoons olive oil,
- salt to taste.

Cut the garlic into slices, and the carrots and zucchini into long strips.





Heat the olive oil in a frying pan, fry the garlic, then the carrots over high heat. Shake the pan from time to time.





After a minute, add the zucchini straws.





Immediately after the zucchini, add the sweet pepper, cut into strips.







Fry the vegetables for a couple of minutes over high heat, then add the cherry tomatoes, cut in half. At this stage, I salted the vegetables so that the tomatoes and zucchini released the juice.





Lastly, add green beans and small cauliflower florets. I boiled them in advance, as they need at least 10 minutes to cook, and the vegetable sauce should be ready in 5-7 minutes. Vegetables should be well fried on the outside, but remain crispy on the inside.





Add soy sauce and stir. Now the vegetables are almost ready.





Simultaneously with the preparation of vegetables, I boiled the noodles in salted water.







When the noodles are ready, drain the water from it and transfer it to the pan with the vegetables.





We mix so that the sauce and vegetables evenly cover the noodles, heat together over high heat, shake the pan several times, then turn off the fire.
